One More Thing I Could Eat Until I Busted

Caramelized onion, roasted garlic, baby arugula and Prairie Breeze cheddar . . .MmmmMMM!

This goes great with a dry, sparkling wine. I made just a couple of minor adjustments to the recipe from “Christina’s Cookbook: Recipes and Stories from a Northwest Island Kitchen” by Christina Orchid.
Note to self: plant more arugula this spring!
